Toasting With Tea |
Jennifer and I continue to grow in our friendship and our commitment to making time for one another. Our favorite thing to do is have tea and dessert on a Tuesday afternoon when she has off from work. We agree on the same types of tea, and we always love the same gluten-free desserts! This time it was chocolate zucchini cake.
I'm already looking forward to our November 11th visit! :)
When Asher died, Jennifer sent me a card as both my vet and my friend saying that she would always remember Asher as the reason we met and became friends. What a wonderful legacy Asher has left behind in so many ways.
So, this Friday, I'd like to link you up to two FANTASTIC gluten-free zucchini bread recipes that we have enjoyed here. The chocolate zucchini bread is very rich and decadent. The regular zucchini bread is wonderfully light and fluffy for a gluten-free baked good. Both come from a site we recently discovered called A Girl Defloured. :)

The only thing we made sure to use that isn't specified in this recipe is our favorite Scharffen-Berger baking chocolate--the 70% bittersweet baking chocolate that comes in a 9.7 ounce bar and is wrapped in light blue.

As she mentions, this bread freezes well, so that is what we did after slicing it. It has been perfect for snack time! Oh, how I had missed the zucchini bread I grew up eating. You won't miss your 'regular' zucchini break at all after tasting this recipe.
Sure, you'll get a zillion hits now online when you google for a gluten-free recipe of whatever it is you are looking for, but it's always hard to know which ones are really going to work and which ones aren't going to be so great. Hopefully, we've saved you some of the hard work of sorting that all out.
